Ingredients
  

  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1½ tsp cinnamon
  • ¼ tsp salt
  • 1¾ cups milk (or almond milk)
  • ⅓ cup maple syrup or honey
  • 1 large egg (or flax egg)
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract
  • 1 cup mixed berries or diced apples

Instructions
 

  • Preheat oven to 375°F (190°C). Grease 8x8" baking dish.
    Mix dry ingredients (oats through salt).
    Whisk wet ingredients (milk through vanilla).
    Combine wet and dry mixtures. Fold in fruit.
    Pour into dish. Bake 35-40 minutes until set.
    Cool 5 minutes before serving.
