Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 8 oz mushrooms, sliced
  • 6-8 slices bacon, cooked and crumbled
  • 1 cup shredded Colby Jack or Monterey Jack cheese
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 1 tbsp mayonnaise
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Marinate Chicken: In a bowl, mix honey, Dijon mustard, mayonnaise, onion powder, and garlic powder. Coat chicken breasts with half of the sauce and marinate for 30+ minutes (optional).
    Cook Chicken: Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side until fully cooked (165°F internal temp). Set aside.
    Sauté Mushrooms: In the same skillet, sauté mushrooms until tender (3-4 minutes).
    Assemble: Place chicken in a baking dish. Top with mushrooms, crumbled bacon, and shredded cheese.
    Broil: Broil for 2-3 minutes until cheese melts.
    Serve: Drizzle with remaining honey-mustard sauce.

  • For deeper flavor, marinate chicken for 2+ hours.
