- ½ tsp salt
- ½ cup grated Parmesan
- ¼ cup almond flour (or breadcrumbs)
- 1 egg
- 2 tbsp fresh parsley, chopped
- 1 garlic clove, minced
- ½ tsp onion powder
- ¼ tsp black pepper
- 1 tbsp olive oil (for spraying)
Toss zucchini with salt. Let sit 10 mins, then squeeze out excess liquid.Mix zucchini with remaining ingredients (except oil).Form into 12 small patties.Air fry at 375°F (190°C) for 10-12 mins, flipping halfway, until golden.Spray lightly with oil before cooking.
