Preheat the air fryer to 375°F (190°C).Split the lobster tails in half lengthwise and remove the meat. Set the shells aside.In a skillet, melt butter over medium heat. Add shallots and sauté until translucent.Pour in white wine and cook until reduced by half.Stir in heavy cream and Dijon mustard, then simmer until the sauce thickens.Add lobster meat and cook for 2-3 minutes. Remove from heat and mix in Parmesan cheese and parsley.Spoon the lobster mixture back into the shells.Place the stuffed lobster tails in the air fryer and cook for 8-10 minutes, or until the top is golden and bubbly.Serve hot with lemon wedges.

For extra flavor, sprinkle some breadcrumbs on top before air frying.
