Description

Witch’s Veggie Potion Soup is a whimsical and healthy Halloween-themed soup featuring a vibrant green broth made from blended vegetables, with floating ‘eyeballs’ (mozzarella or tofu balls) and ‘worms’ (spaghetti squash or noodles). Ingredients

– 2 tablespoons Olive Oil
– 1 large Yellow Onion, chopped
– 2 cloves Garlic, minced
– 4 cups Russet Potatoes, peeled and cubed
– 1 medium Head of Cauliflower, chopped into florets
– 4 cups Red Cabbage, shredded
– 8 cups Vegetable Broth
– 1 teaspoon Dried Thyme
– 1 teaspoon Dried Rosemary
– 1 Bay Leaf
– 1 cup Heavy Cream (or full-fat coconut milk for a vegan option)
– Salt and Black Pepper, to taste


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
  2. Add zucchini, spinach, broccoli, and herbs. Cook for 5 minutes until vegetables begin to soften.
  3. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes until vegetables are tender.
  4. Use an immersion blender to puree the soup until smooth. Season with salt and pepper.
  5. To serve, ladle soup into bowls and add cooked spaghetti squash or noodles (‘worms’) and mozzarella or tofu balls (‘eyeballs’).
  6. For added effect, add a slice of black olive to each ‘eyeball’ to create a pupil.
  7. Serve warm with spooky decorations on the side.
