- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 4 (8 oz) packages of cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- Green and purple food coloring
Instructions
- Preheat the oven to 325°F (160°C).
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat cream cheese and 1 cup sugar until smooth, about 2-3 minutes. Add vanilla and mix well.
- Add eggs one at a time, mixing until fully incorporated. Stir in sour cream.
- Divide the batter into two bowls; color one green and the other purple.
- Pour both batters into the prepared crust in alternating layers. Swirl with a knife if desired.
- Bake for 50-60 minutes until the edges are firm and the center has a slight jiggle.
- Leave the cheesecake in the oven with the door ajar for 1 hour. Cool completely before refrigerating for at least 4 hours or overnight.
- Carefully remove from the springform pan, slice, and serve chilled.
