- 2 ripe pears (Bosc or Anjou)
- 1 bottle Pinot Noir red wine
- 1 cup yogurt (Greek or coconut yogurt)
- 1/2 cup sugar
- 1 cinnamon stick
- 2 star anise (optional)
- 1 lemon (for zest and juice)
Instructions
- Peel the pears, leaving the stems intact for presentation.
- In a saucepan, combine the red wine, sugar, lemon juice, cinnamon stick, and optional star anise. Simmer over medium heat, stirring until the sugar dissolves.
- Add the pears to the poaching liquid and cook for about 15 minutes, turning them halfway through until tender.
- Remove the pears with a slotted spoon and let cool on a plate.
- Simmer the poaching liquid for another 10-15 minutes until it reduces to a syrupy consistency.
- Serve the poached pears with yogurt on top and drizzle with the reduced poaching liquid. Garnish with lemon zest if desired.
