- 4 slices bacon

Instructions
- Cook the bacon in a skillet over medium heat until crispy, about 5 to 7 minutes. Remove and let drain on paper towels.
- Sauté the red onion in the bacon drippings for about 2 minutes.
- Add apple cider vinegar and Dijon mustard to the skillet, stirring to combine.
- Toss in the spinach and cook until just wilted, about 1 to 2 minutes.
- Season with salt and pepper to taste.
