Description

A warm salad featuring fresh spinach, crispy bacon, and a tangy dressing, perfect for any meal.

Ingredients

Scale
  • 4 cups fresh spinach
  • 4 slices bacon
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional: Hard-boiled eggs or croutons for topping

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 5 to 7 minutes. Remove and let drain on paper towels.
  2. Sauté the red onion in the bacon drippings for about 2 minutes.
  3. Add apple cider vinegar and Dijon mustard to the skillet, stirring to combine.
  4. Toss in the spinach and cook until just wilted, about 1 to 2 minutes.
  5. Season with salt and pepper to taste.
  6. Crumble bacon over the top and add any optional toppings. Serve warm.

Notes

For best flavor, use fresh ingredients. Store any leftovers in the fridge for up to 2 days, keeping toppings separate until serving.
