- 1 tsp Cinnamon
- Pinch of Salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine rolled oats, mashed bananas (or applesauce), honey (or maple syrup), vanilla extract, baking powder, cinnamon, and a pinch of salt in a large bowl. Mix well until fully integrated.
- Fold in the diced peaches, ensuring an even distribution of fruit throughout the mixture.
- Scoop out portions of the cookie mixture and drop them onto the prepared baking sheet, flattening each slightly for even baking.
- Bake for 12-15 minutes or until the cookies are golden brown and set in the center.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Consider substituting honey with maple syrup for a vegan option. Store cookies in an airtight container for up to a week.
