Description

Ingredients

  • 2 Mashed Ripe Bananas or 1 cup Unsweetened Applesauce
  • 1 cup Fresh Peaches, diced
  • ½ cup Honey or Maple Syrup
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • Pinch of Salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine rolled oats, mashed bananas (or applesauce), honey (or maple syrup), vanilla extract, baking powder, cinnamon, and a pinch of salt in a large bowl. Mix well until fully integrated.
  3. Fold in the diced peaches, ensuring an even distribution of fruit throughout the mixture.
  4. Scoop out portions of the cookie mixture and drop them onto the prepared baking sheet, flattening each slightly for even baking.
  5. Bake for 12-15 minutes or until the cookies are golden brown and set in the center.
  6. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Consider substituting honey with maple syrup for a vegan option. Store cookies in an airtight container for up to a week.
