Description

Delicious and healthy Whole Wheat Apple Muffins that combine the sweetness of apples and the richness of whole grains, perfect for breakfast or snacks.


Ingredients

Scale
  • 2 cups chopped apples
  • 1/2 cup honey, pure maple syrup, or brown sugar
  • 1 3/4 cups whole wheat pastry flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup milk (whole or plant-based)
  • 1/4 cup vegetable oil or canola oil
  • 1 egg (beaten)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a muffin pan with paper liners or spray with non-stick cooking spray.
  3. Wash and chop the apples into small pieces, tossing them with the sweetener and setting aside.
  4. Mix the dry ingredients in a large bowl.
  5. In another bowl, combine the wet ingredients until smooth.
  6. Make a well in the dry mix, pour in the wet ingredients, and stir gently until just combined.
  7. Fold in the chopped apples.
  8. Spoon the mixture into the muffin liners, filling each about 3/4 full.
  9. Bake for 20-22 minutes, or until a toothpick comes out clean.
  10. Cool for 5 minutes before transferring to a wire rack.

Notes

Store muffins in an airtight container at room temperature for up to 3 days, or freeze for up to 6 months.
