- 4 white fish fillets (cod or tilapia)
- 2 tablespoons olive oil (extra virgin)
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1/2 cup green olives, pitted and sliced
- 2 tablespoons capers, rinsed
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a skillet over medium heat until it shimmers.
- Add the minced garlic and sauté until fragrant, about 1 minute.
- Stir in the diced tomatoes, olives, capers, and red pepper flakes. Simmer for 5-7 minutes.
- Season with salt and pepper, adjusting to taste.
- Place the fish fillets in the skillet and spoon the sauce over them.
- Cover and cook for 10-15 minutes, until the fish flakes easily with a fork.
- Garnish with fresh parsley and enjoy!
