A comforting family favorite, this White Fish Puttanesca combines tender white fish with a tangy sauce made from tomatoes, olives, and capers for a vibrant and satisfying meal.


Ingredients

  • 4 white fish fillets (cod or tilapia)
  • 2 tablespoons olive oil (extra virgin)
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup green olives, pitted and sliced
  • 2 tablespoons capers, rinsed
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat until it shimmers.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in the diced tomatoes, olives, capers, and red pepper flakes. Simmer for 5-7 minutes.
  4. Season with salt and pepper, adjusting to taste.
  5. Place the fish fillets in the skillet and spoon the sauce over them.
  6. Cover and cook for 10-15 minutes, until the fish flakes easily with a fork.
  7. Garnish with fresh parsley and enjoy!
