Ingredients

  • 3/4 cup lime juice
  • 1/4 cup packed mint leaves
  • 1/2 cup sugar
  • 1/2 cup white rum
  • 1/2 cup coconut rum
  • 1 cup canned coconut milk
  • Sparkling water
  • Pomegranate arils

Instructions

  1. Muddle the mint leaves with sugar and lime juice for about 1-2 minutes.
  2. Add the white rum and coconut rum to the pitcher. Stir well.
  3. Slowly whisk in the coconut milk until well blended.
  4. Let the mixture chill in the refrigerator for at least 30 minutes.
  5. Fill four glasses halfway with ice.
  6. Pour the mojito mixture into each glass until about 3/4 full. Top with sparkling water.
  7. Add a sprig of mint and a handful of pomegranate arils for garnish.

Notes

Store any leftover mojito mixture in an airtight container in the fridge for up to 2 days. Add sparkling water just before serving.
