- 3/4 cup lime juice
- 1/4 cup packed mint leaves
- 1/2 cup sugar
- 1/2 cup white rum
- 1/2 cup coconut rum
- 1 cup canned coconut milk
- Sparkling water
- Pomegranate arils
Instructions
- Muddle the mint leaves with sugar and lime juice for about 1-2 minutes.
- Add the white rum and coconut rum to the pitcher. Stir well.
- Slowly whisk in the coconut milk until well blended.
- Let the mixture chill in the refrigerator for at least 30 minutes.
- Fill four glasses halfway with ice.
- Pour the mojito mixture into each glass until about 3/4 full. Top with sparkling water.
- Add a sprig of mint and a handful of pomegranate arils for garnish.
Notes
Store any leftover mojito mixture in an airtight container in the fridge for up to 2 days. Add sparkling water just before serving.
