Description

A flavorful twist on classic barbecue chicken featuring a creamy white barbecue sauce that elevates summer grilling.


Ingredients

  • 1½ cups mayonnaise
  • ¼ cup white vinegar
  • 1 tablespoon coarsely ground black pepper
  • 1 tablespoon whole grain mustard
  • 1 teaspoon kosher salt
  • 1 teaspoon granulated sugar
  • 1 tablespoon fresh garlic, finely minced
  • 2 teaspoons prepared horseradish
  • 4 large skin-on, bone-in chicken breasts (about 1 lb each)
  • ¼ cup olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Prepare the White Barbecue Sauce: Whisk together mayonnaise, white vinegar, black pepper, mustard, kosher salt, sugar, minced garlic, and horseradish in a bowl.
  2. Marinate the Chicken: Place chicken breasts in a zip-top bag, pour in 2 cups of the prepared sauce, seal, and shake to coat. Marinate in the fridge for at least 4 hours or ideally overnight.
  3. Preheat the Grill: Preheat your grill to high heat (around 450°F).
  4. Prepare the Chicken: Remove chicken from the bag, rinse under cold water, and pat dry. Discard the used marinade.
  5. Oil and Season: Brush the chicken skin with olive oil and season with kosher salt and black pepper.
  6. Grill the Chicken: Grill chicken skin-side down for 2-3 minutes until grill marks appear, then flip, brush with oil, and grill for an additional 2 minutes.
  7. Move to Cooler Zone: Transfer the chicken to a cooler part of the grill (skin side up) and reduce heat to medium (about 425°F). Brush with reserved sauce.
  8. Baste and Cook: Cover the grill, cooking for about 5 minutes and repeating the basting process every 5 minutes.
  9. Finish Cooking: After the final baste, cover and grill for 10-20 minutes, or until internal temperature reaches 160-162°F.
  10. Rest and Serve: Remove the chicken from the grill, let rest for 5 minutes, then brush with remaining sauce before serving.

Notes

For optimum flavor, marinate chicken overnight. Rinsing off the marinade is important for achieving grill marks.
