Description

A delightful blend of creamy whipped feta, fresh vegetables, and crispy toast that brings the flavors of a classic Greek salad to your table.


Ingredients

  • 1 cup crumbled feta cheese
  • 2 tablespoons extra virgin olive oil
  • 4 slices of rustic bread (sourdough or whole grain)
  • 1 cup juicy tomatoes, diced
  • 1 cucumber, diced
  • ½ cup pitted olives, halved
  • 1 teaspoon dried oregano
  • Additional olive oil for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the bread and arrange it on a baking sheet. Toast for about 10 minutes, flipping halfway through.
  2. In a food processor, blend the feta cheese and olive oil until smooth and creamy, about 1-2 minutes.
  3. While the bread is toasting, prepare the toppings by dicing the tomatoes and cucumber, and halving the olives.
  4. Spread a generous layer of whipped feta on each piece of toasted bread, then top with diced tomatoes, cucumbers, and olives.
  5. Sprinkle with oregano and drizzle with olive oil. Serve immediately.

Notes

For the best texture, use room temperature feta before whipping. Toast the bread just before serving to maintain its crunch.
