Description
A quick and delicious weeknight dinner featuring rotini pasta, beef, Italian sausage, and fresh spinach in a garlic butter sauce.

- 12 oz Rotini Pasta
- 1 pound Ground Beef
- 1 pound Italian Sausage (casing removed)
- 4 cups Fresh Spinach
- 4 cloves Garlic (minced)
- 1 stick Butter (room temperature)
- Parmesan Cheese (for serving)
- Salt & Pepper (to taste)
Instructions
- In a large pot, bring salted water to a boil. Add rotini and cook according to package directions until al dente (8-10 minutes). Reserve about a cup of pasta water, then drain and set aside.
- In a large skillet over medium heat, add the ground beef and Italian sausage. Cook until browned (6-8 minutes).
- Add minced garlic and sauté for 1-2 minutes until fragrant, stirring constantly.
- Toss in the fresh spinach, stirring until just wilted (2-3 minutes). Season with salt and pepper.
- Add the cooked rotini and butter to the skillet. Toss, adding reserved pasta water until desired creaminess is reached.
- Plate and top generously with grated Parmesan cheese.
Notes
Make sure to reserve pasta water to adjust the sauce’s creaminess. This dish can be prepared in advance and stored for up to 3 days in the fridge.
