- 200g Water Mimosa (Pak Grached)
- Boiling Water (enough to blanch)
- Salt (to taste)
- Dipping Sauce (optional): mix of soy sauce, lime juice, and crushed garlic
Instructions
- Prepare your ingredients: Gather all your ingredients, ensuring your water mimosa is clean.
- Break the shoots: Take a strand and break the shoot tip and young stems, aiming for about 10–15 cm lengths.
- Remove the foamy tissue: Hold the top of the strand securely and pull away to gently remove the white foamy tissue and roots.
- Cut into pieces: Break the pods into pieces of about 4 cm long and discard the fibrous lower parts.
- Rinse and clean: Place the cut water mimosa in a bowl and rinse under running water until the water is clear.
- Prepare to blanch: Bring a pot of water to a vigorous boil and add a pinch of salt.
- Blanch and shock: Add the cleaned water mimosa to the boiling water for 1-2 minutes and then shock it in ice water.
- Serve and enjoy: Drain the water mimosa and serve with your chosen dipping sauce.
Notes
Use fresh and vibrant stems for the best flavor and texture. Over-blanching can result in a limp dish.
