A refreshing twist on a classic Waldorf Chicken Salad featuring a blend of chicken, apples, grapes, and a creamy dressing.
Ingredients

- 3 cups cooked chicken breast, chopped
- 1/3 cup nonfat Greek yogurt
- 2 tbsp reduced fat mayonnaise
- 1 tbsp lemon juice
- 1/2 tsp onion powder
- 1/2 tsp pepper
- 1/2 tsp salt
- 1 apple, chopped
- 3/4 cup red grapes, halved
- 1/4 cup celery, chopped
- 2 tbsp green onions, chopped
- 2 tbsp walnuts, chopped
Instructions
- Prepare the Dressing: In a large mixing bowl, whisk together the nonfat Greek yogurt, reduced fat mayonnaise, lemon juice, onion powder, salt, and pepper until smooth and creamy. (About 5 minutes)
- Combine Ingredients: Add the chopped chicken, apple, halved grapes, celery, green onions, and walnuts to the bowl with the dressing. Use a spatula or wooden spoon to gently fold the ingredients together until well-coated. (About 5 minutes)
- Taste and Adjust: Sample your salad and adjust the seasoning as needed. (About 2 minutes)
- Chill and Serve: Cover the salad and place it in the refrigerator for at least 30 minutes to let the flavors meld. Serve cold over greens, in a sandwich, or with crackers!
Notes
For a vegan alternative, replace the chicken with chickpeas and use plant-based yogurt and mayonnaise.
