Ingredients
- Egg Roll Wrappers
- Cooked Chicken (shredded rotisserie chicken recommended)
- Sausage (andouille or any smoked sausage)
- Bell Pepper (red or yellow)
- Onion (sweet or yellow)
- Garlic (minced)
- Creole Seasoning
- Cajun Seasoning
- Oil for Frying (vegetable or canola)
Instructions
- In a large skillet, heat 1 tablespoon of oil over medium heat. Add the chopped onion and bell pepper, along with minced garlic. Sauté until softened, about 3-5 minutes.
- Stir in the cooked chicken and sausage, along with 1-2 teaspoons each of Creole and Cajun seasoning. Mix until heated through, about 3-4 minutes.
- Transfer the filling to a bowl and let it cool for about 10 minutes.
- Place an egg roll wrapper on your work surface in a diamond shape. Spoon about 2 tablespoons of the filling near the center.
- Fold the bottom point over the filling, then fold in the sides, securing the filling. Roll towards the top point, ensuring it’s tight and secure.
- In a deep fryer or heavy skillet, heat oil to 350°F (175°C). Use enough oil for frying, about 2-3 inches deep.
- Gently place egg rolls in the hot oil, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 3-5 minutes.
- Remove the egg rolls and let them drain on a paper towel-lined plate. Serve hot with your favorite dipping sauce.
Notes
For a healthier version, you can bake the rolls at 425°F (220°C) for 15-20 minutes, flipping halfway through.
