Description

Savory and spicy egg rolls filled with seasoned chicken and sausage, wrapped in a crispy exterior, perfect for any occasion.


Ingredients

  • Egg Roll Wrappers
  • Cooked Chicken (shredded rotisserie chicken recommended)
  • Sausage (andouille or any smoked sausage)
  • Bell Pepper (red or yellow)
  • Onion (sweet or yellow)
  • Garlic (minced)
  • Creole Seasoning
  • Cajun Seasoning
  • Oil for Frying (vegetable or canola)

Instructions

  1. In a large skillet, heat 1 tablespoon of oil over medium heat. Add the chopped onion and bell pepper, along with minced garlic. Sauté until softened, about 3-5 minutes.
  2. Stir in the cooked chicken and sausage, along with 1-2 teaspoons each of Creole and Cajun seasoning. Mix until heated through, about 3-4 minutes.
  3. Transfer the filling to a bowl and let it cool for about 10 minutes.
  4. Place an egg roll wrapper on your work surface in a diamond shape. Spoon about 2 tablespoons of the filling near the center.
  5. Fold the bottom point over the filling, then fold in the sides, securing the filling. Roll towards the top point, ensuring it’s tight and secure.
  6. In a deep fryer or heavy skillet, heat oil to 350°F (175°C). Use enough oil for frying, about 2-3 inches deep.
  7. Gently place egg rolls in the hot oil, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 3-5 minutes.
  8. Remove the egg rolls and let them drain on a paper towel-lined plate. Serve hot with your favorite dipping sauce.

Notes

For a healthier version, you can bake the rolls at 425°F (220°C) for 15-20 minutes, flipping halfway through.
