Description

Savory and satisfying Vegetarian Mushroom Tacos featuring meaty, seasoned mushrooms as the star filling. These tacos are packed with umami flavor, topped with fresh cilantro, onions, and a squeeze of lime, offering a delicious and easy meat-free meal.


Ingredients

– 2 tablespoons Olive Oil
– 24 ounces / 680g Mushrooms (a mix of cremini and shiitake)
– 1 large Yellow Onion, finely chopped
– 4 cloves Garlic, minced
– 1 tablespoon Chili Powder
– 1 teaspoon Smoked Paprika
– 1 teaspoon Cumin
– 1 teaspoon Dried Oregano
– 2 tablespoons Soy Sauce or Tamari
– Juice of 1 Lime
– 1/2 cup Fresh Cilantro, chopped
– 12 small Corn or Flour Tortillas
– Salt and Black Pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook until softened, about 3-4 minutes.
  2. Add sliced mushrooms to the skillet and cook for 8-10 minutes, stirring occasionally, until the mushrooms have released their liquid and started to brown.
  3. Add minced garlic, chili powder, cumin, smoked paprika, salt, and pepper. Cook for another 2 minutes until fragrant.
  4. While the mushrooms are cooking, warm the tortillas in a dry skillet or over a gas flame until soft and pliable.
  5. To assemble the tacos, spoon the mushroom mixture into the warm tortillas.
  6. Top with diced avocado, chopped cilantro, a squeeze of lime juice, and any other desired toppings.
  7. Serve immediately.

Notes

  • For a deeper flavor, use a mix of different mushrooms like shiitake or oyster.
  • If the mushrooms release a lot of liquid, continue cooking until most of the liquid has evaporated for a better texture.
  • For a vegan version, omit the cheese or use a plant-based alternative.
  • These can be made spicier by adding a diced jalapeño to the mushroom mixture or using hot sauce as a topping.
