- 1/2 cup tomato sauce (look for no added sugars)
- 2 tbsp taco seasoning (homemade or pre-packaged)
- 2 cups cooked white rice (jasmine or basmati)
- 2 tbsp lime juice (freshly squeezed is best)
- 1/4 cup fresh cilantro, chopped
- Salt and pepper, to taste
- 1 cup corn (fresh or frozen)
- 1 avocado, chopped
- 1 red bell pepper, chopped
- 1 jalapeño, chopped (optional)
- 2 tbsp red onion, diced
- 2 cups canned black beans, rinsed and drained
- 1 cup pico de gallo or salsa of choice
- 1 cup shredded lettuce or purple cabbage
Instructions
- Heat a large skillet over medium-high heat. Add the vegan ground beef and cook for 6-8 minutes.
- Pour in the tomato sauce and taco seasoning, turning the heat down to low. Simmer for 5 minutes.
- Combine cooked rice, lime juice, cilantro, and a pinch of salt and pepper in a bowl.
- Mix corn, chopped avocado, red bell pepper, jalapeño, red onion, cilantro, and lime juice in another bowl.
- Layer the rice at the bottom of serving bowls and top generously with seasoned vegan ground beef.
- Add the fresh avocado corn salsa, pico de gallo, shredded lettuce, and any additional toppings.
Notes
For the best flavor, use ripe avocados and fresh lime juice. Substitute any plant-based protein if desired.
