Ingredients

  • 1 lb vegan ground beef (like Impossible Beef or Beyond Burger)
  • 1/2 cup tomato sauce (look for no added sugars)
  • 2 tbsp taco seasoning (homemade or pre-packaged)
  • 2 cups cooked white rice (jasmine or basmati)
  • 2 tbsp lime juice (freshly squeezed is best)
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper, to taste
  • 1 cup corn (fresh or frozen)
  • 1 avocado, chopped
  • 1 red bell pepper, chopped
  • 1 jalapeño, chopped (optional)
  • 2 tbsp red onion, diced
  • 2 cups canned black beans, rinsed and drained
  • 1 cup pico de gallo or salsa of choice
  • 1 cup shredded lettuce or purple cabbage

Instructions

  1. Heat a large skillet over medium-high heat. Add the vegan ground beef and cook for 6-8 minutes.
  2. Pour in the tomato sauce and taco seasoning, turning the heat down to low. Simmer for 5 minutes.
  3. Combine cooked rice, lime juice, cilantro, and a pinch of salt and pepper in a bowl.
  4. Mix corn, chopped avocado, red bell pepper, jalapeño, red onion, cilantro, and lime juice in another bowl.
  5. Layer the rice at the bottom of serving bowls and top generously with seasoned vegan ground beef.
  6. Add the fresh avocado corn salsa, pico de gallo, shredded lettuce, and any additional toppings.

Notes

For the best flavor, use ripe avocados and fresh lime juice. Substitute any plant-based protein if desired.
