Ingredients

  • 1 medium apple, diced
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. In a large bowl, mix gluten-free flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, combine applesauce, maple syrup, almond milk, and vanilla extract until smooth.
  4. Gradually add dry ingredients to wet mixture and stir gently until just combined.
  5. Fold in diced apples until evenly distributed.
  6. Spoon batter into muffin tins, filling each about 3/4 full.
  7. Bake for 15-20 minutes until a toothpick inserted comes out clean.
  8. Cool muffins on a wire rack before serving.
