  • 1 cup walnuts, chopped
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup coconut sugar
  • 1/2 cup almond milk
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, combine the chopped dates, walnuts, coconut sugar, almond milk, vegetable oil, and vanilla extract.
  4. Gradually add the flour mixture to the wet mixture, stirring gently until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 45-50 minutes until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
