Ingredients

- 1 can chickpeas, drained and rinsed
- 1/4 cup vegan mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 cup celery, diced
- 1/4 cup red onion, diced
- 1/4 cup pickles, diced
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- Lettuce leaves or your favorite bread for serving
Instructions
- Mash the chickpeas in a mixing bowl until they’re chunky, about 2-3 minutes.
- Add the vegan mayonnaise, Dijon mustard, diced celery, red onion, pickles, lemon juice, salt, and pepper. Mix well for another 2 minutes.
- Taste the salad and adjust seasoning as needed.
- Serve your Vegan Chickpea Chicken Salad on crisp lettuce leaves or spread on your favorite bread.
Notes
For creaminess, let the mayo sit at room temperature. Reserve some chickpeas for added texture if desired.
