Description

Delightfully spooky vegan hand pies filled with a luscious blueberry filling, perfect for Halloween or any occasion.


Ingredients

  • 2 sheets of puff pastry
  • 100g fresh or frozen blueberries
  • 50g caster or granulated sugar (plus extra for sprinkling)
  • 2 tablespoons cornstarch or cornflour
  • 2 teaspoons lemon juice
  • 50g icing sugar

Instructions

  1. Preheat your oven to 200°C (or 400°F).
  2. In a medium bowl, combine blueberries, sugar, cornstarch, and lemon juice. Toss gently and set aside for a few minutes.
  3. Roll out your puff pastry sheets on a floured surface and cut out ghost shapes or circles (about 4 inches in diameter).
  4. Place a tablespoon of blueberry filling onto each pastry cutout, moisten edges with water, fold over, and seal by crimping with a fork.
  5. Score the tops to allow steam to escape and sprinkle with extra sugar. Bake for 20-25 minutes until golden brown.
  6. Let cool slightly and drizzle with a glaze made from icing sugar and a splash of water if desired.
