- 2 sheets of puff pastry
- 100g fresh or frozen blueberries
- 50g caster or granulated sugar (plus extra for sprinkling)
- 2 tablespoons cornstarch or cornflour
- 2 teaspoons lemon juice
- 50g icing sugar
Instructions
- Preheat your oven to 200°C (or 400°F).
- In a medium bowl, combine blueberries, sugar, cornstarch, and lemon juice. Toss gently and set aside for a few minutes.
- Roll out your puff pastry sheets on a floured surface and cut out ghost shapes or circles (about 4 inches in diameter).
- Place a tablespoon of blueberry filling onto each pastry cutout, moisten edges with water, fold over, and seal by crimping with a fork.
- Score the tops to allow steam to escape and sprinkle with extra sugar. Bake for 20-25 minutes until golden brown.
- Let cool slightly and drizzle with a glaze made from icing sugar and a splash of water if desired.
Notes
Keep an eye on the baking time; every oven is different. Avoid overfilling to prevent pies from bursting.
