  • 1/2 cup instant vanilla pudding mix
  • 1 can (15 oz) pumpkin puree
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, sugar, pudding mix, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the pumpkin puree, vegetable oil, and eggs until smooth.
  4. Gradually stir the wet ingredients into the dry ingredients until just blended.
  5. Pour the batter into the prepared loaf pan and level the surface.
  6. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
