- 3–4 medium-sized potatoes (Russet or Yukon Gold recommended)
- 1 pound ground beef or chicken (or turkey mince)
- 2 tablespoons taco seasoning
- 2 tablespoons extra virgin olive oil
- Salt and pepper (to taste)
- 1 can (14 oz) diced tomatoes
- 1 cup shredded cheese (Cheddar or Mexican blend)
- 1 cup shredded lettuce (romaine or iceberg)
- 1 avocado (sliced)
- Sour cream (for topping)
- Salsa (for drizzling)
Instructions
- Preheat your oven to 425°F (220°C).
- Cut the potatoes into small cubes and toss them in a large bowl with olive oil, salt, and pepper.
- Spread the potatoes on a baking sheet and roast for about 25-30 minutes, flipping halfway through.
- Heat a skillet over medium heat, add the ground meat, and cook until no longer pink.
- Add the taco seasoning and diced tomatoes to the meat and let it simmer for about 5-7 minutes.
- Assemble your bowls with roasted potatoes, seasoned meat, shredded lettuce, cheese, avocado, sour cream, and salsa.
- Serve warm and enjoy!
Notes
For extra crispiness, soak cubed potatoes in cold water for 30 minutes before roasting.
