- 8 oz bow tie pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, diced
- 1 cup mozzarella balls
- 1/4 cup olives, sliced
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Cook the pasta by bringing a large pot of salted water to a boil. Add the bow tie pasta and cook until al dente, about 8 to 10 minutes. Drain and let cool.
- Chop the cherry tomatoes, cucumber, bell pepper, red onion, and olives into uniform pieces.
- Combine the chopped vegetables, mozzarella balls, olives, and fresh basil in a large mixing bowl.
- Mix in the cooled pasta into the vegetable mixture.
- Dress the salad with olive oil and balsamic vinegar, tossing gently to coat.
- Season with salt and pepper to taste, then cover and chill in the refrigerator for at least 30 minutes.
