Ingredients

  • 8 oz bow tie pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, diced
  • 1 cup mozzarella balls
  • 1/4 cup olives, sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the pasta by bringing a large pot of salted water to a boil. Add the bow tie pasta and cook until al dente, about 8 to 10 minutes. Drain and let cool.
  2. Chop the cherry tomatoes, cucumber, bell pepper, red onion, and olives into uniform pieces.
  3. Combine the chopped vegetables, mozzarella balls, olives, and fresh basil in a large mixing bowl.
  4. Mix in the cooled pasta into the vegetable mixture.
  5. Dress the salad with olive oil and balsamic vinegar, tossing gently to coat.
  6. Season with salt and pepper to taste, then cover and chill in the refrigerator for at least 30 minutes.
