Description

Thin, delicate Ukrainian-style crepes that can be served sweet or savory – a versatile staple of Ukrainian cuisine perfect for breakfast, dessert, or even main dishes.


Ingredients

  • 6 large eggs
  • 1/2 cup granulated sugar (omit for savory crepes)
  • 3/4 cup all-purpose flour
  • 2 cups whole milk
  • 1/2 cup oil

Instructions

  1. In blender, combine all ingredients and blend until smooth (30 seconds). Let batter rest 30 minutes.
  2. Heat 8-inch nonstick skillet over medium heat. Lightly butter.
  3. Pour 1/4 cup batter into center of pan, immediately swirling to coat bottom.
  4. Cook 1-2 minutes until edges lift and bottom is golden. Flip and cook 30 seconds more.
  5. Transfer to plate. Repeat with remaining batter, stacking crepes as you go.
  6. Fill with desired sweet or savory fillings and fold/roll.

Notes

  • Traditional fillings: sweet farmer’s cheese, berries with honey, or savory mushrooms/meat
  • Batter keeps refrigerated for 2 days (may need to thin with water)
