Thin, delicate Ukrainian-style crepes that can be served sweet or savory – a versatile staple of Ukrainian cuisine perfect for breakfast, dessert, or even main dishes.
Ingredients
- 6 large eggs
- 1/2 cup granulated sugar (omit for savory crepes)
- 3/4 cup all-purpose flour
- 2 cups whole milk
- 1/2 cup oil
Instructions
- In blender, combine all ingredients and blend until smooth (30 seconds). Let batter rest 30 minutes.
- Heat 8-inch nonstick skillet over medium heat. Lightly butter.
- Pour 1/4 cup batter into center of pan, immediately swirling to coat bottom.
- Cook 1-2 minutes until edges lift and bottom is golden. Flip and cook 30 seconds more.
- Transfer to plate. Repeat with remaining batter, stacking crepes as you go.
- Fill with desired sweet or savory fillings and fold/roll.
Notes
- Traditional fillings: sweet farmer’s cheese, berries with honey, or savory mushrooms/meat
- Batter keeps refrigerated for 2 days (may need to thin with water)
- For vegan version: use plant-based milk and egg substitutes
