Description

Ingredients

  • 2/3 cup Italian breadcrumbs
  • 3/4 cup onion, finely diced
  • 1 egg
  • 2 tsp garlic, freshly minced
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dried oregano
  • 3.5 cups cooked brown rice
  • 4 cups cucumbers, sliced
  • 2 cups kalamata olives
  • 1.25 cups tzatziki sauce
  • Fresh dill for garnish
  • 1 lemon, cut into wedges

Instructions

  1. Preheat your oven to 400°F.
  2. In a large bowl, mix ground turkey, breadcrumbs, onion, egg, garlic, salt, pepper, and oregano until just combined; shape into 2-inch meatballs.
  3. Place meatballs on a parchment-lined baking sheet and bake for 15 minutes or until cooked through.
  4. Broil meatballs on high for 2-3 minutes until golden brown.
  5. Divide cooked brown rice into serving bowls, top with meatballs, cucumbers, and olives, drizzle with tzatziki sauce, and garnish with fresh dill and lemon wedges.
