- 2/3 cup Italian breadcrumbs
- 3/4 cup onion, finely diced
- 1 egg
- 2 tsp garlic, freshly minced
- 3/4 tsp salt
- 1/2 tsp pepper
- 1 tsp dried oregano
- 3.5 cups cooked brown rice
- 4 cups cucumbers, sliced
- 2 cups kalamata olives
- 1.25 cups tzatziki sauce
- Fresh dill for garnish
- 1 lemon, cut into wedges
Instructions
- Preheat your oven to 400°F.
- In a large bowl, mix ground turkey, breadcrumbs, onion, egg, garlic, salt, pepper, and oregano until just combined; shape into 2-inch meatballs.
- Place meatballs on a parchment-lined baking sheet and bake for 15 minutes or until cooked through.
- Broil meatballs on high for 2-3 minutes until golden brown.
- Divide cooked brown rice into serving bowls, top with meatballs, cucumbers, and olives, drizzle with tzatziki sauce, and garnish with fresh dill and lemon wedges.
