- 12 oz penne or fettuccine pasta
- 2 tablespoons olive oil
- 1 lb chicken breast, cut into bite-sized pieces
- Salt and black pepper to taste
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Pinch of red pepper flakes (optional)
Instructions
- Cook pasta according to package directions, reserve ½ cup pasta water, then drain
- Heat olive oil in large skillet, season and cook chicken until golden and cooked through
- Remove chicken from skillet and set aside
- In same skillet, sauté garlic and sun-dried tomatoes until fragrant
- Add heavy cream and chicken broth, bring to simmer
- Stir in Parmesan cheese and Italian seasoning until sauce is creamy
- Add spinach and cook until wilted
- Return chicken to skillet, add cooked pasta, and toss to coat
- Add reserved pasta water if needed to adjust consistency
- Serve immediately with extra Parmesan
Notes
- Use freshly grated Parmesan for best melting
- Don’t overcook chicken to maintain tenderness
- Reserve pasta water to adjust sauce thickness
- Store leftovers in airtight container for up to 3 days
