Description

A rich and creamy pasta dish featuring tender chicken, sun-dried tomatoes, and fresh spinach in a luxurious Parmesan sauce, bringing the flavors of Tuscany to your dinner table.


Ingredients

  • 12 oz penne or fettuccine pasta
  • 2 tablespoons olive oil
  • 1 lb chicken breast, cut into bite-sized pieces
  • Salt and black pepper to taste
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Pinch of red pepper flakes (optional)

Instructions

  1. Cook pasta according to package directions, reserve ½ cup pasta water, then drain
  2. Heat olive oil in large skillet, season and cook chicken until golden and cooked through
  3. Remove chicken from skillet and set aside
  4. In same skillet, sauté garlic and sun-dried tomatoes until fragrant
  5. Add heavy cream and chicken broth, bring to simmer
  6. Stir in Parmesan cheese and Italian seasoning until sauce is creamy
  7. Add spinach and cook until wilted
  8. Return chicken to skillet, add cooked pasta, and toss to coat
  9. Add reserved pasta water if needed to adjust consistency
  10. Serve immediately with extra Parmesan

Notes

  • Use freshly grated Parmesan for best melting
  • Don’t overcook chicken to maintain tenderness
  • Reserve pasta water to adjust sauce thickness
  • Store leftovers in airtight container for up to 3 days
