A vibrant and healthy stir fry combining ground turkey and zucchini, perfect for busy weeknights.


Ingredients

  • 1/4 cup low sodium soy sauce
  • 2 tbsp honey
  • 2 tbsp water
  • 2 tsp toasted sesame oil
  • 2 garlic cloves, minced
  • 2 tsp rice vinegar
  • 2 tsp ginger, minced
  • 2 tsp Sriracha
  • 1 tbsp cornstarch
  • 1 tbsp olive oil
  • 6 green onions, sliced
  • 2 zucchini, sliced into half moons
  • 1.33 lb 93 percent lean ground turkey

Instructions

  1. Prepare the sauce: In a small container, mix together the soy sauce, honey, water, toasted sesame oil, minced garlic, rice vinegar, ginger, Sriracha, and cornstarch. Set aside.
  2. Sauté the vegetables: Add 1 tbsp olive oil to a skillet over medium heat. Once hot, toss in the sliced green onions and zucchini. Cook for 4 to 5 minutes, stirring occasionally, until they are just tender but still crisp. Remove the veggies from the skillet and set aside.
  3. Cook the turkey: In the same skillet, add the ground turkey. Cook for 6 to 8 minutes, breaking it apart as it cooks until golden brown.
  4. Combine it all: Return the zucchini and sauce mixture back to the skillet with the turkey. Bring to a simmer for an additional 2 to 3 minutes until the sauce thickens.
  5. Final touches: Taste for seasoning—adding more Sriracha if desired. Serve hot and enjoy!

Notes

For maximum flavor, always opt for fresh ingredients. You can swap zucchini for broccoli or bell peppers.
