Description
Soft and pillowy peanut butter cookie cups filled with gooey peanut butter and topped with mini peanut butter cups for a delightful treat.
Ingredients

- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1/2 teaspoon baking soda
- 1/2 cup peanut butter chips
- 1/2 cup chopped peanuts (optional)
- 12 mini peanut butter cups
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine peanut butter, granulated sugar, egg, and baking soda until smooth.
- Gently fold in peanut butter chips and chopped peanuts.
- Scoop about a tablespoon of the mixture into each greased muffin tin cup, filling them halfway.
- Bake for 10-12 minutes until edges are set and centers remain soft.
- Press a mini peanut butter cup into the center of each cookie cup immediately after removing from the oven.
- Allow to cool for a few minutes before removing from the tin.

Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
