Delicious homemade trail mix granola bars packed with seeds, nuts, and dried fruits, perfect for a healthy snack.
Ingredients

- 1/2 cup seeds of choice (1/4 cup sunflower seeds, 1/4 cup pepitas recommended)
- 1/2 cup chopped nuts (walnuts, pecans, almonds suggested)
- 1/2 cup gluten-free oats
- 1 teaspoon chia seeds
- 3 tablespoons unsweetened coconut flakes
- Pinch of sea salt
- 1/4 teaspoon cinnamon or apple/pumpkin pie spice
- 1/4 cup cranberries
- 1/4 cup dried pineapple
- 2 tablespoons chocolate chunks
- 1/3 cup raw honey
- 1/4 cup nut butter
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Toast your seeds and nuts on a sheet pan for 5 minutes until lightly toasted.
- In a large bowl, combine toasted seeds, nuts, oats, chia seeds, coconut flakes, sea salt, cinnamon, cranberries, dried pineapple, and chocolate; toss to mix.
- In a saucepan over medium heat, combine honey, nut butter, and vanilla extract; stir for 1 minute until combined and warm.
- Pour the warm mixture over the dry ingredients and mix until all are coated.
- Transfer to a lined loaf pan and pack tightly with a greased spatula.
- Refrigerate until hardened enough to cut into bars.
Notes
Store in an airtight container in the fridge for up to two weeks or freeze for up to three months.
