Description
A nostalgic and comforting dish featuring tortellini in a rich tomato cream sauce, garnished with cheese and fresh basil.

- 250g tortellini (fresh or dried)
- 200ml heavy cream
- 200g tomatoes, diced
- 100g cheese (mozzarella or parmesan), grated
- Fresh basil leaves
- Salt and pepper to taste
- Olive oil
Instructions
- Bring a pot of salted water to a boil. Add tortellini and cook according to package instructions (3-5 minutes for fresh tortellini). Drain and set aside.
- In a large skillet, heat 1-2 tablespoons of olive oil over medium heat for 3-4 minutes.
- Add the diced tomatoes to the skillet and cook for about 5 minutes until they soften.
- Pour in the heavy cream, stirring to combine, and simmer gently for 2-3 minutes.
- Stir in the grated cheese until melted and smooth.
- Season with salt and pepper, and add optional crushed red pepper flakes.
- Combine the cooked tortellini with the sauce until well coated.
- Serve with fresh basil leaves and a drizzle of olive oil.
Notes
Ensure heavy cream is at room temperature for a smoother sauce. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
