Description

A nostalgic and comforting dish featuring tortellini in a rich tomato cream sauce, garnished with cheese and fresh basil.


Ingredients

Scale
  • 250g tortellini (fresh or dried)
  • 200ml heavy cream
  • 200g tomatoes, diced
  • 100g cheese (mozzarella or parmesan), grated
  • Fresh basil leaves
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Bring a pot of salted water to a boil. Add tortellini and cook according to package instructions (3-5 minutes for fresh tortellini). Drain and set aside.
  2. In a large skillet, heat 1-2 tablespoons of olive oil over medium heat for 3-4 minutes.
  3. Add the diced tomatoes to the skillet and cook for about 5 minutes until they soften.
  4. Pour in the heavy cream, stirring to combine, and simmer gently for 2-3 minutes.
  5. Stir in the grated cheese until melted and smooth.
  6. Season with salt and pepper, and add optional crushed red pepper flakes.
  7. Combine the cooked tortellini with the sauce until well coated.
  8. Serve with fresh basil leaves and a drizzle of olive oil.

Notes

Ensure heavy cream is at room temperature for a smoother sauce. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
