Description

A refreshing summer salad combining juicy peaches, ripe tomatoes, and fragrant basil, perfect for any occasion.


Ingredients

  • 1/4 cup red onion, thinly sliced
  • 3 large peaches, ripe and juicy
  • 2 cups grape tomatoes, halved
  • 1 cup basil leaves, torn
  • Kosher or sea salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tbsp extra virgin olive oil
  • 1 1/2 tbsp white wine vinegar
  • 1 tsp honey

Instructions

  1. Start by slicing the red onion thinly and halving the grape tomatoes.
  2. In a large serving bowl, gently combine the diced peaches, halved tomatoes, sliced red onion, and torn basil leaves.
  3. Sprinkle with kosher salt and freshly ground pepper to taste.
  4. In a small bowl, whisk together the olive oil, white wine vinegar, and honey until combined.
  5. Drizzle the dressing over the salad and toss gently to combine all the flavors.
