Description

A simple and aromatic homemade toasted rice powder that elevates the flavor of various dishes.


Ingredients

  • 1 cup Uncooked Long Grain White Rice or Glutinous Rice
  • 23 Makrut Lime Leaves (Optional)
  • 12 Lemongrass Stalks (Optional)
  • 1 inch Galangal (Optional)

Instructions

  1. Toast the rice: Heat a dry skillet over high heat. Add one cup of uncooked long grain white rice or glutinous rice. Stir constantly until the grains turn a deep brown (approximately 10-15 minutes).
  2. Add optional ingredients: If you’re using Makrut lime leaves, add them to the rice while toasting.
  3. Add lemongrass or galangal: Thinly slice any lemongrass or galangal and add it to the skillet.
  4. Transfer the mixture to a mortar and pestle or coffee grinder. Grind until it reaches a fine sand-like texture (about 1-2 minutes).
  5. Store: Keep your Toasted Rice Powder in an airtight container in a cool, dark place.

Notes

For best results, use a nonstick skillet or a heavy cast-iron one. Store in an airtight container for up to one month at room temperature.
