- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon instant espresso powder
- 1 cup ladyfinger crumbs
- 1/2 cup cocoa powder, for coating
Instructions
- In a mixing bowl, combine mascarpone, heavy cream, powdered sugar, and vanilla. Mix until smooth and creamy.
- Dissolve espresso powder in 1 tablespoon hot water. Cool slightly, then mix into mascarpone mixture.
- Gently fold in ladyfinger crumbs until well combined.
- Chill mixture in refrigerator for 15-20 minutes until firm enough to handle.
- Scoop and roll mixture into 1-inch balls.
- Roll each truffle in cocoa powder to coat completely.
- Chill for an additional 10 minutes before serving.
