Instructions
- Preheat your oven to 350°F (175°C) and generously grease and flour two 9-inch round cake pans.
- Combine 1¾ cups of all-purpose flour, ¾ cup of unsweetened cocoa powder, 2 cups of granulated sugar, 1½ teaspoons of baking powder, 1½ teaspoons of baking soda, and 1 teaspoon of salt in a large bowl. Stir until evenly mixed.
- Add in 2 large eggs, 1 cup of whole milk, ½ cup of vegetable oil, and 2 teaspoons of vanilla extract. Beat on medium speed for about 2 minutes until well blended and creamy.
- Carefully stir in 1 cup of boiling water, whisking until the batter is thin and smooth.
- Pour the batter evenly into the prepared pans.
- Bake for 30-35 minutes, checking doneness with a toothpick inserted in the center.
- Cool the cakes in the pans for 10 minutes before transferring them to wire racks to cool completely.
Notes
For a richer flavor, use Dutch-process cocoa powder. To enhance moisture, incorporate flaxseeds or chia seeds for added nutrition.
