Ingredients

Scale
  • 5 red Thai chilis, rinsed and stems removed
  • 1 head garlic, peeled
  • 4 tablespoons water

  • 6 tablespoons granulated sugar
  • 4 tablespoons vinegar (white or rice vinegar)

Instructions

  2. Pound the chopped garlic in a mortar (or food processor) until crushed.
  3. Pound the chilis with the garlic until they reach a similar texture.
  4. Mix the 4 tablespoons of water into a saucepan over medium heat.
  5. Add 1 teaspoon of salt to the warm water.
  6. Combine the pounded chili and garlic mixture in the saucepan.
  7. Sweeten the mixture by stirring in the 6 tablespoons of sugar and 4 tablespoons of vinegar.
  8. Bring the mixture to a boil while watching closely.
  9. Simmer the sauce for about 5 minutes until it reduces by half.
  10. Cool slightly before transferring to a bowl or a sterile container for storage.
