- 5 red Thai chilis, rinsed and stems removed
- 1 head garlic, peeled
- 4 tablespoons water
- 1 teaspoon salt
- 6 tablespoons granulated sugar
- 4 tablespoons vinegar (white or rice vinegar)
Instructions
- Chop the red Thai chilis and garlic into small pieces.
- Pound the chopped garlic in a mortar (or food processor) until crushed.
- Pound the chilis with the garlic until they reach a similar texture.
- Mix the 4 tablespoons of water into a saucepan over medium heat.
- Add 1 teaspoon of salt to the warm water.
- Combine the pounded chili and garlic mixture in the saucepan.
- Sweeten the mixture by stirring in the 6 tablespoons of sugar and 4 tablespoons of vinegar.
- Bring the mixture to a boil while watching closely.
- Simmer the sauce for about 5 minutes until it reduces by half.
- Cool slightly before transferring to a bowl or a sterile container for storage.
Notes
Store your sauce in an airtight glass jar in the fridge for up to 2-3 weeks. Consider freezing portions for longer storage.
