A delicious blend of Thai spices and Western comfort food, featuring macaroni, shrimp, and vibrant vegetables.


Ingredients

  • 3 Tbsp ketchup
  • 2 Tbsp Sriracha hot sauce
  • 2 Tbsp Golden Mountain sauce
  • 1/2 tsp sugar
  • 1/4 tsp white pepper
  • 225 g short tube pasta (like macaroni or penne)
  • 15 medium sized shrimp, peeled and deveined
  • 2 Tbsp butter
  • 56 cloves garlic, chopped
  • 1 cup carrots, bite-sized pieces
  • 1/2 onion, halved crosswise, then julienned
  • 3 eggs
  • 1 large tomato or 2 small ones, cut into wedges
  • 2 Green onions, halved horizontally, then cut into 2-inch pieces

Instructions

  1. Prepare the Pasta: Heat a pot of water over high heat and generously add salt. Once boiling, add the pasta and set a timer for around 8 minutes for al dente.
  2. Mix the Sauce: While the pasta cooks, combine ketchup, Sriracha, Golden Mountain sauce, sugar, and white pepper in a bowl.
  3. Cook the Shrimp: In a wok over medium-high heat, add oil. Once hot, add the shrimp and sear until browned, about 2-3 minutes.
  4. Sauté Vegetables: Add more oil to the wok and melt butter. Toss in garlic and cook until fragrant, then add onions and carrots, sautéing for 1-2 minutes.
  5. Add the Eggs: Push veggies to the side, crack in eggs, and stir slightly until set about 70%.
  6. Combine Pasta and Sauce: Once the pasta is cooked, drain and add to the wok with the sauce mixture, tossing until well coated.
  7. Finish with Fresh Ingredients: Add tomato wedges and green onions, stirring gently to heat through.
  8. Serve: Plate the Thai Style Pasta with Macaroni immediately and enjoy!

Notes

Serve with crispy spring rolls or a Thai-inspired cucumber salad. You can customize the spice level by adjusting the Sriracha.
