- 3 cilantro roots, cleaned
- 7 cloves garlic, peeled
- ½ teaspoon white peppercorns
- 5 cups water
- 1 head daikon, about 18 ounces or 500 grams, sliced into bite-sized pieces
- 12.2 ounces pork ribs, cut into sections
- 2 ounces shiitake mushrooms, sliced (optional)
- 1 teaspoon salt
- 5 spring onions, cut into 1-inch pieces
Instructions
- Prepare the aromatic base: In a mortar, pound the cilantro roots, garlic, and white peppercorns until finely crushed.
- Simmer the broth: In a large pot over medium heat, add the 5 cups of water and the crushed aromatic mixture. Bring to a gentle simmer.
- Add daikon and pork: Once the broth is simmering, carefully add the sliced daikon and pork ribs. Allow to simmer for about 20 minutes.
- Include the mushrooms: After 20 minutes, bring the soup to a rolling boil and add the shiitake mushrooms. Cook for an additional 5 minutes.
- Season: Turn off the heat and season with salt. Taste and adjust if necessary.
- Finish: Add the spring onions on top, cover the pot and let sit for 1 minute before serving.
Notes
For a veg-friendly version, substitute pork with firm tofu and vegetable broth. Store leftover soup in an airtight container for up to 3 days in the fridge.
