Description

Experience the comforting flavors of Thai Spicy Pork Bone Soup, a traditional dish filled with rich broth and tender meat, perfect for family gatherings.


Ingredients

  • 3 lb pork neck or back bones
  • 3.7 qt water
  • ½ an onion, large dice
  • ½ a head garlic, peeled and smashed
  • ½ teaspoon white peppercorns, cracked
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 cups pork stock
  • 3 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 2 teaspoons sugar
  • 3 tablespoons chopped garlic
  • 34 Thai chilies, seeds removed if needed
  • ⅔ cup chopped cilantro
  • Jasmine rice for serving

Instructions

  1. Add pork bones to a large stock pot and cover with water.
  2. Add soy sauce and fish sauce; bring to a low simmer for 30 minutes.
  3. Skim off any scum that rises to the surface.
  4. Mix in diced onions, smashed garlic, and cracked peppercorns; simmer for an additional 1.5 hours.
  5. Take 2 cups of stock and heat until boiling.
  6. Pound chilies until broken or chop them finely.
  7. Turn off the heat and fold in garlic and chilies to the boiling broth.
  8. Season with sugar, additional fish sauce, and lime juice to taste.
  9. Stir in cilantro for freshness.
  10. Serve the pork bones on a platter and ladle the broth over them.
  11. Accompany with jasmine rice on the side.

Notes

Taste and adjust the flavors as necessary according to your preferences. For extra flavors, add garlic after turning off the heat.
