Description

Experience the vibrant flavors of Thailand with this authentic shrimp paste dip, perfect for serving with fresh veggies and rice.


Ingredients

Scale
  • 2 tablespoons dried shrimp (soaked in hot water)
  • 23 cloves garlic (peeled)
  • Thai chilies, to taste (1-2 for mild, extra for more heat)
  • 1.5 tablespoons finely chopped palm sugar
  • 2 tablespoons shrimp paste
  • 34 tablespoons lime juice (freshly squeezed)
  • 12 teaspoons fish sauce
  • 23 tablespoons water (adjust for desired consistency)
  • Extra chopped red and green peppers (optional, for color)
  • For Serving: Jasmine rice, steamed or raw veggies, pan-fried mackerel, vegetable omelet, boiled eggs, Japanese eggplant slices

Instructions

  1. Soak the dried shrimp: Cover the dried shrimp in water and microwave for 30 seconds or until steaming hot. Let them cool down for a minute.
  2. Pound the shrimp: Drain the shrimp and pound them in a mortar and pestle until they are fluffy and coarse.
  3. Add the garlic and chilies: Toss in the garlic cloves and chilies, then pound until finely incorporated.
  4. Incorporate the palm sugar: Add the finely chopped palm sugar and continue to pound until it mostly dissolves into the mixture.
  5. Mix in the shrimp paste: Add the shrimp paste and mix energetically until no clumps remain.
  6. Add lime juice and fish sauce: Incorporate lime juice and fish sauce, adjusting to taste. Start with one tablespoon of water, mix, then taste again for consistency and flavor, adding more water as needed.
  7. Serve: Transfer to a serving bowl and add a sprinkle of extra chopped peppers for color. Serve with jasmine rice and an array of accompaniments.

Notes

Store in an airtight container in the fridge for up to 3 days. Can be made a day in advance for better flavor.
