  • Toasted shredded coconut for serving (optional)

Instructions

  1. Prep Your Flavors: In a small bowl, combine the curry powder, white pepper, sugar, and salt. Set it aside.
  2. Mix the Sauces: Whisk together the soy sauce, fish sauce, and shrimp paste (if using).
  3. Heat It Up: In a wok, heat 2 tablespoons of neutral oil over high heat.
  4. Sear the Shrimp: Add the shrimp in a single layer, sear for 2-3 minutes, then flip and cook until opaque. Remove from the pan.
  5. Scramble the Eggs: Add more oil if necessary; scramble the eggs until just set.
  6. Combine Bases: Mix in cooked rice and diced onions with the eggs in the wok.
  7. Incorporate Flavors: Sprinkle the seasoning mix and sauce over the rice, tossing until evenly coated.
  8. Add Sweetness & Texture: Toss in the pineapple and raisins, then return the shrimp, stir-frying for an additional 2-3 minutes.
  9. Garnish: Stir in the cashews, tomatoes, and green onions. Serve in a pineapple bowl if desired.
