Description

A delightful and fluffy Thai Omelette, perfect for any meal of the day.


Ingredients

  • 1 green onion (optional)
  • ¼ cup vegetable oil
  • 1 large egg
  • ½ teaspoon fish sauce
  • Steamed rice
  • Sriracha sauce (or ketchup)

Instructions

  1. Prep that green onion: Finely chop the green part and set aside.
  2. Heat the oil: In a frying pan, heat ¼ cup of oil over medium-high heat until it shimmers.
  3. Crack open the egg: In a bowl, combine the egg, chopped green onion, and fish sauce. Beat until well combined.
  4. Check the oil temperature: Dip a chopstick into the egg mixture, then into the hot oil; if it sizzles, you’re ready.
  5. Pour & fry: Pour the egg mixture into the pan and fry for about 1 minute until the edges are golden.
  6. Flipping time: Flip the omelette and fry the other side for about another minute until crisped to your liking.
  7. Serve & enjoy: Slide the omelette onto a plate and serve hot over steamed rice with Sriracha or ketchup.

Notes

For a fluffier omelette, add a splash of water to the egg mixture before beating.
