- 1 green onion (optional)
- ¼ cup vegetable oil
- 1 large egg
- ½ teaspoon fish sauce
- Steamed rice
- Sriracha sauce (or ketchup)
Instructions
- Prep that green onion: Finely chop the green part and set aside.
- Heat the oil: In a frying pan, heat ¼ cup of oil over medium-high heat until it shimmers.
- Crack open the egg: In a bowl, combine the egg, chopped green onion, and fish sauce. Beat until well combined.
- Check the oil temperature: Dip a chopstick into the egg mixture, then into the hot oil; if it sizzles, you’re ready.
- Pour & fry: Pour the egg mixture into the pan and fry for about 1 minute until the edges are golden.
- Flipping time: Flip the omelette and fry the other side for about another minute until crisped to your liking.
- Serve & enjoy: Slide the omelette onto a plate and serve hot over steamed rice with Sriracha or ketchup.
Notes
For a fluffier omelette, add a splash of water to the egg mixture before beating.
