Ingredients

- 1/2 cup dried longan
- 3 pandan leaves
- 50.7 ounces filtered water
- 1 cup brown sugar
Instructions
- Prepare the longan: Rinse the dried longan under cool water until the water runs clear. Soak it in a bowl of water for about 20 minutes.
- Prep the pandan leaves: Rinse the fresh pandan leaves well. If using dried ones, place them in a steeper for easy removal later.
- Boil the mixture: In a large pot over medium heat, add the soaked longan and pandan leaves along with the water. Bring to a gentle boil, then reduce heat and let simmer for 20 minutes.
- Sweeten the pot: Increase the heat and add the brown sugar, stirring until dissolved, about 2-3 minutes.
- Cool and serve: Remove from heat and allow to cool to room temperature. Serve over ice or store in the refrigerator.
