A vibrant salad featuring edamame, colorful bell peppers, and a creamy peanut dressing, perfect for summer gatherings or cozy dinners.


Ingredients

  • 2 cups edamame (shelled)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup shredded carrots
  • 1 cup purple cabbage, shredded
  • 1/2 cup green onions, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup peanuts, chopped

Instructions

  1. In a large bowl, combine the edamame, red and yellow bell peppers, carrots, purple cabbage, green onions, and cilantro. Mix gently but thoroughly.
  2. In a separate bowl, whisk together peanut butter, soy sauce, lime juice, honey, and sesame oil until smooth and creamy.
  3. Drizzle the dressing over the salad and toss gently to coat.
  4. Top with chopped peanuts before serving and enjoy!
